Do you love sugar cookies but hate making them?  They really are a long process.  Well, I have the recipe for you!  These Cream Cheese Sugar Cookie Bars are amazing!  They have the same great taste of sugar cookies without all the hassle.  Not only do the bars themselves have cream cheese in them, I made a cream cheese frosting too!  These bars are so light and fluffy!

When I made these sugar cookies bars my husband thought I made just one large cookie…haha.  Maybe if you’re lucky and I don’t want to share.  It is basically one cookie before you cut them into bars.    First you make the cream cheese sugar cookie and bake in the oven in a cookie sheet tray with sides.  Then you make the yummy powdered sugar cream cheese frosting and smother the cookie with it.  This recipe make about 24 large size bars.

Serves: 24 large bars
 
Ingredients
  • Cookie:
  • 1½ cups granulated sugar
  • 1 cup butter, softened
  • 8 oz cream cheese, softened
  • 1 egg
  • ½ tsp almond extract
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 2½ cups all purpose flour
  • Frosting:
  • ½ cup butter, softened
  • 4 oz cream cheese, softened
  • 3½ cups powdered sugar
  • 1 tsp vanilla extract
  • 3 Tbsp milk (I used almond milk)
Instructions
  1. In a large mixing bowl or stand mixer combine butter, cream cheese sugar and egg. Whisk mixture until nice and smooth
  2. Add the vanilla and almond extracts and beat 1 minute
  3. Gradually add the flour, baking powder and baking soda into the wet ingredients and beat for 2 minutes
  4. Spread the dough into a cookie sheet tray with sides and press down with spatula
  5. Bake at 350 degrees for 18-20 minutes or until golden brown
  6. Let the cookie cool completely
  7. For the frosting, in a large bowl or stand mixer beat the butter and cream cheese until smooth
  8. Add the powdered sugar, milk and vanilla then beat for 4 minutes until nice and fluffy
  9. Spread the frosting onto the cooled cookie and cute into bars

    I totally get where you’re coming from. Cookie bars are SO much easier than having to shape each individual cookie. I mean they taste just as awesome so might as well right? I absolutely love sugar cookies, and I bet they’re even better with some cream cheese added in :).
