Hello there!  The one thing that helps me stay on track and focused is meal and snack prepping.  The hardest part is being hungry and not having any food prepared.  That is why I love these Clean Eating Carrot Cake Bites!  I can make a batch of these bites and pull them out to snack on all week.  They are really delicious and taste like carrot cake without all the added sugar and preservatives.

For these Clean Eating Carrot Cake Bites all you need is a heavy duty food processor.  Since this recipe calls for raw fruits, vegetables, and nuts, I recommended processing each ingredient individually.  The first time I made this recipe I just threw everything in my food processor and almost blew the motor.  I definitely learned from that experience.  So, after that I process  each ingredient separately.

All of the ingredients should come together, creating a giant sticky ball.  I use my hands to roll out about 1 inch to 1 1/2 inch sized bites.  For this recipe I was able to get about 20 bites.  Place the bites in a well sealed container and store in the refrigerator up to one week.  These clean eating carrot cake bites are great for popping out and eating before or after working out or whenever you are craving something sweet.  These bites satisfy my sweet tooth and help me stay on track eating healthy.  Plus, they taste amazing!

Ingredients
  1. 1 cup almonds
  2. 1/2 cup golden raisins
  3. 15 dates, pitted
  4. 1 cup unsweetened shredded coconut
  5. 1 cup grated carrot
  6. 1 teaspoon ground cinnamon
  7. 1 teaspoon ground nutmeg
  8. 1/8 teaspoon salt
Instructions
  1. Place almonds, raisins, and spices into a large heavy duty food processor. Pulse several times until well mixed. Add pitted dates and pulse until the mixture is crumbled and will hold together. Add grated carrots and pulse until combined. Add coconut and pulse until well mixed and forms a sticky ball.
  2. Roll mixture into 1 to 1 1/2 inch bites. Store in a well sealed container in the refrigerator up to one week.
