Cheesy Potato Casserole

Can you say comfort food?  This Cheesy Potato casserole is exactly that.  I’m a huge potato fan.  I will eat a potato any way you can fix one.  This casserole is a great side dish to serve with meat.  You can bring to a potluck or party.  But, I always make it for the Holidays.

It is really easy to make and doesn’t take a lot of ingredients.

Cheesy Potato Casserole

Here is what you’ll need:

  • 1 package of frozen hashbrowns
  • 1 can cream of chicken soup
  • 1 stick of butter (melted)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup chopped onion
  • 1 16 oz sour cream
  • 1 10 package shredded cheddar cheese

Preheat oven to 350 degrees.  Mix all the ingredients together in a large bowl.  Spread mixture into a 9 x 13 greased casserole dish.  Bake for approx 1 hr 15 min or until golden brown.

This casserole is super easy to make and SO SO good!

    Me too! I love potatoes made any way! I’ve made scalloped potatoes before but never potato casserole. Your casserole looks delicious, will have to try this. 🙂

    I absolutely love this recipe! I have been making it for years and have yet to have any left over when I take it to any family gathering. It is always requested I might add. There is just one thing I do different that maybe you might want to try. I use french fried onions instead of a real onion. I use the big can and mix most of the can in with the casserole saving enough out to cover the top of the casserole the last 5 minutes of baking. I started this due to not having an onion one time and it was a “BIG” hit. Everyone loved it more so than with the real onion and it was faster and easier for me so it was a win win situation. Just thought I’d share. I’m new to your site and I absolutely love love love it!!!! Thanks so much for all you share.
