Cashew Butter Cookies

One of my all time favorite cookies to make are peanut butter cookies.  There’s only four ingredients and they turn out perfect every time.  Now a days, there are a lot of popular nut butters on the shelves like almond and cashew.  So, I thought I would use the same recipe as my peanut butter cookies and use cashew butter instead.  Have you tried any of them?

I have made my own homemade peanut butter before and next on my list is cashew butter.   For this recipe I used Jif.  Cashew butter is a lot softer than peanut butter, so the consistency is slightly smoother.  The cookies are delicious!  Oh my goodness…you can really taste the cashews.  I can honestly say cashews are my favorite nuts and these might be my new favorite cookie.

Cashew Butter Cookies

Serves: 16 cookies
 
Ingredients
  • 1 cup cashew butter. You can use creamy or crunchy. I prefer creamy.
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 350 degrees. Spray a large baking sheet with non- stick cooking spray
  2. In a large mixing bowl, combine the cashew butter, sugar, egg and vanilla. Stir well with a spatula or spoon
  3. Roll the dough into balls the size of walnuts
  4. Place the balls on the greased cookie sheet. With a fork, dipped in the sugar to prevent sticking, press a crisscross design on each cookie
  5. Bake for 10 to 12 minutes
  6. Remove from oven and sprinkle the cookies with sugar
  7. Cool Slightly before removing from pan

    Oh my goodness, how have I not tried cashew butter yet?!!! These cookies look so so good! Cashews are my absolute favorite nuts, and I got so excited when I saw your post!!!! I need to get some of this cashew butter and try these cookies!!! Thanks for the inspiration!!!! 🙂

    I can’t wait to try baking these – they look so simple with so few ingredients. I think I have that kind of cashew butter too but it may be the crunchy kind. I too have been wanting to make my own cashew butter – I made almond butter a couple of weeks ago and it was the best I have ever had and only had 2 ingredients. Thanks for the cookie recipe – pinned.
