Blueberry Flax Granola

A friend of mine got me hooked on blueberry flax granola from our local co-op store.  It is so yummy but very expensive.  So, I wanted to make my own homemade granola to cut down on cost and also know every ingredient that goes in to making it.

Eating healthier is one of my goals for 2014.  I am 12 weeks into my half marathon training and see the benefits of healthy foods to fuel my body.  When I eat junk I feel sluggish and tired.  But when I eat foods with nutrients in them I feel strong and have energy.

Wet ingredients for blueberry flax granola

Training for a half marathon is no joke!  I downloaded a 16 week program and will run my half on February 8th.  I do all my runs outside which has been interesting to say the least.  We just recently had our second snow storm and this is the coldest winter in 20 years!  Layers are  my friend.

Baked Blueberry Flax Granola

 You can incorporate the granola in yogurt, homemade peanut butter or simply eat it as cereal. This granola is packed with vitamins, fiber, protein and anti-oxidants from the blueberries.

This recipe was adapted from My Kitchen Addiction
Ingredients
  • 18 oz container of old fashion oats
  • ½ cup chopped almonds
  • ½ cup chopped pecans
  • ½ cup chopped walnuts
  • ½ cup chopped pine nuts
  • ½ cup unsweetened shredded coconut
  • ¼ cup flax seed
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • ½ cup maple syrup
  • ½ cup extra virgin olive oil
  • 1 cup dried blueberries
Instructions
  1. In a large mixing bowl combine, oats, nuts, coconut, flax seed, salt and cinnamon. Stir until combined.
  2. In a separate bowl or measuring cup whisk together syrup and oil.
  3. Pour the liquid mixture into the large bowl of dry ingredients. Mix until well combine.
  4. Pour the mixture into two baking sheets with sides and spread evenly in a single layer.
  5. Bake granola at 300 degrees for 30 to 45 mins or until the granola is golden brown. Stirring every 10 mins. *The granola will continue to bake and harden once out of the oven.
  6. Remove granola from the oven and let cool. Add the blueberries and store in an air tight container.

The aroma from the oven while the granola was baking is heavenly!  The smell of spicy cinnamon filled the air.
