Blackberry Arugula Salad with Citrus Dressing - a refreshing and healthy summer salad recipeHello there!  The sun is finally shining and it’s hotter than fire here in Southern Illinois now that summer is half way over.  I swear there has only been two or three days of sunshine this summer up until now.  Today I am sharing a delicious and easy to make Blackberry Arugula Salad with Citrus Dressing recipe that is perfect to beat the heat this summer.  This is a light and refreshing salad made with just a few ingredients that have really bold flavors and natural vitamins.  I made a citrus dressing to pour over the salad and let me tell you, it’s yummy!  This is a quick salad to make for those busy lunch times.

A refreshing blackberry, pecan, goat cheese, and arugula salad with a citrus vinaigrette dressingMy mornings are pretty busy around the house.  It’s when the natural sunlight is best for photographing either recipes or DIYs and craft projects for the blog.  My daughter eats her breakfast, plays with her toys and watches PBS while I am blogging.  By the time I get everything set up for a “photo shoot”, take photographs, tear everything down and edit pictures, it’s time for lunch.  I am starving when that time rolls around.  I generally don’t like to cook myself anything for lunch since I have to cook dinner later, so I really enjoy easy and healthy meals like this blackberry arugula salad with citrus dressing.

Homemade Citrus Vinaigrette Recipe - great for dressing saladsI like to make my own salad dressing when I can.  This citrus dressing recipe is super easy and tangy.  I add 1/2 cup extra virgin olive oil, 1/2 cup  grapefruit juice (this is my favorite all natural juice), 3 tablespoons honey, sea salt and ground black pepper to taste in a mason jar.  Put the lid on the jar and shake until well combined.  The dressing separates slightly, so mix it real good before pouring onto your salad.  Then you can store the left over dressing in the mason jar in the refrigerator up to one week.  You can substitute your favorite citrus in place of grapefruit.  I personally love grapefruit juice.

Salad Ingredients
  1. organic baby arugula leaves
  2. fresh blackberries
  3. crumbled goat cheese
  4. pecan halves
  5. citrus dressing (see recipe below)
Citrus Dressing Ingredients
  1. 1/2 cup extra virgin olive oil
  2. 1/2 cup grapefruit juice
  3. 3 tablespoons honey
  4. sea salt
  5. ground black pepper
Instructions
  1. Add all citrus dressing ingredients into a mason jar and shake until well combined or whisk together in a small bowl
  2. Toss dressing with arugula, blackberries and pecan halves, and then serve topped with crumbled goat cheese.
