Citrus Yogurt Popsicles

Citrus Yogurt Popsicles – an easy summertime popsicle recipe using all natural orange beet juice and non-fat vanilla Greek yogurt.  It’s a delicious and healthy treat to cool down this summer.

Citrus Yogurt Popsicles using all natural orange beet juice and vanilla Greek yogurtHello there!  Is it hot where you are?  The temperatures have been in the high 90’s with 100+ heat index.  I’d say that is pretty hot and humid here in Southern Illinois.  So, today I am sharing a Citrus Yogurt Popsicle recipe to help cool you down.  These gorgeous looking popsicles are made with 100 % all natural orange beet juice and creamy non-fat vanilla Greek yogurt.  Just two delicious ingredients and you’re done!  I love super simple recipes like this one.  You can beat the heat with just a couple of popsicle making steps!

Easy to make yogurt popsiclesThe orange beet juice is a very unique flavor.  It is all natural and has a earthly taste from the beets and the oranges adds just enough sweetness.  It has a gorgeous purple red tone that is very vibrant.  Natalie’s Juice is my favorite company who makes the orange beet juice.  Pair the juice with creamy non-fat vanilla Greek yogurt and this is one fantastic popsicle recipe.

Homemade popsicle recipeTo make the popsicles, you will need a mold and sticks.  I like this one.  I started by adding the vanilla Greek yogurt to the bottom of the molds about 1/3 of the way up.  I placed the molds into the freezer for about 30 minutes until the yogurt starts to freeze.  Once the yogurt hardens slightly, I removed the molds from the freezer and poured the orange beet juice to fill the remaining space in each mold.  I added a few orange slices in some of the molds for texture and color.  This step is optional.  Insert popsicle sticks then place the popsicle mold back into the freezer and freeze until completely hardened or approximately 4 hours.  To remove the popsicles from the molds, I run the molds under hot water until the popsicles release.

Ingredients
  1. 32 oz container of non-fat vanilla Greek yogurt
  2. 16 oz container of orange beet juice
  3. orange slices (optional)
Instructions
  1. For a layered pop: Add yogurt 1/3 full into the popsicle mold, divided evenly between the popsicle molds. Place in the freezer for 30 minutes, then top with orange beet juice and orange slices. Insert the popsicle sticks and continue freezing for 4 hours, or until firm.
