Hey there!  Do you have an abundance of vegetables in your garden?  Well, today I am sharing a Cucumber Tomato and Onion Salad!  It’s a refreshing summer salad made with veggies from the garden.  This recipe really is all about summer.  It’s the only time of year we get fresh produce straight from the ground.

As a kid growing up in Southern Illinois I can always remember my Dad having a garden in our back yard.  My mom made this salad a lot in the summertime with the veggies from the garden.  Now that I’m married and moved half an hour away, I don’t have a garden of my own but I am lucky enough to have fresh fruits, produce and local farms close to home.  Fresh veggies are what really make this recipe so amazing.

First, you want to start by chopping the veggies.  I used 4 tomatoes, 3 cucumbers and 1 white onion.  Make sure to peel the cucumbers and onion before chopping.  Then, place the cut veggies into a large bowl.  In a separate bowl, mix together 3/4 cup apple cider vinegar, 1 tablespoon salt and 1 tablespoon sugar.  Pour the liquid over the veggies and let set awhile so the veggies can soak up the juice.  Store in an air tight container in the refrigerator for a couple of days.

Ingredients
  1. 4 tomatoes
  2. 3 cucumbers
  3. 1 white onion

    This is my favorite Summer salad. I love it 🙂 I grew up eating it and now my family does too. I make mine with a red onion, tomatoes, cucumbers, garlic powder, Italian seasoning and balsamic vinegar. That;s it-nice and simple.

    This is one of my favorite summer salads! I’ve always used bottled Italian salad dressing, but I love the idea of using apple cider vinegar. I’m going to give it a try. Thanks for sharing.

    Your salad looks so delicious, have to make this a.s.a. p. so simple and inexpensive, quick. Kind of salad I love to make. After while anything too heavy just doesn’t appeal to us at all. We get tired of same old stuff. Love crunchy fresh cucumbers too. Might use little green onions instead of white onion in our salad. Versatile too. Glad you shared this great salad. Sometimes we only have salad for our dinner. Happy weekend Pinned
